Ingredients

  • All-purpose flour - 200 grams
  • Butter - 100 grams (chilled, diced)
  • Cold water - 60 ml
  • Salt - 1/2 teaspoon
  • Ground chicken - 200 grams
  • Carrot - 50 grams (finely diced)
  • Bell pepper - 50 grams (finely diced)
  • Spring onion - 30 grams (chopped)
  • Soy sauce - 1 tablespoon
  • Garlic - 1 clove (minced)
  • Ginger - 1 teaspoon (grated)
  • Black pepper - 1/4 teaspoon
  • Egg - 1 (for egg wash)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour and salt. Add the chilled diced butter and rub it into the flour until the mixture resembles breadcrumbs.
  3. Gradually add cold water, mixing until a dough forms. Wrap it in plastic wrap and refrigerate for 30 minutes.
  4. In a skillet over medium heat, add the ground chicken, garlic, and ginger. Cook until the chicken is browned.
  5. Add the diced carrot, bell pepper, and spring onion to the skillet. Pour in the soy sauce and sprinkle with black pepper. Cook for an additional 5 minutes, then remove from heat and let cool.
  6. On a floured surface, roll out the dough to about 5mm thickness. Cut into two circles of about 15cm diameter.
  7. Place half of the chicken filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  8. Beat the egg and brush it over the top of each Bing Zhi for a golden finish.
  9. Place the Bing Zhi on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
