Ingredients
- All-purpose flour - 200 grams
- Butter - 100 grams (chilled, diced)
- Cold water - 60 ml
- Salt - 1/2 teaspoon
- Ground chicken - 200 grams
- Carrot - 50 grams (finely diced)
- Bell pepper - 50 grams (finely diced)
- Spring onion - 30 grams (chopped)
- Soy sauce - 1 tablespoon
- Garlic - 1 clove (minced)
- Ginger - 1 teaspoon (grated)
- Black pepper - 1/4 teaspoon
- Egg - 1 (for egg wash)
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the flour and salt. Add the chilled diced butter and rub it into the flour until the mixture resembles breadcrumbs.
- Gradually add cold water, mixing until a dough forms. Wrap it in plastic wrap and refrigerate for 30 minutes.
- In a skillet over medium heat, add the ground chicken, garlic, and ginger. Cook until the chicken is browned.
- Add the diced carrot, bell pepper, and spring onion to the skillet. Pour in the soy sauce and sprinkle with black pepper. Cook for an additional 5 minutes, then remove from heat and let cool.
- On a floured surface, roll out the dough to about 5mm thickness. Cut into two circles of about 15cm diameter.
- Place half of the chicken filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Beat the egg and brush it over the top of each Bing Zhi for a golden finish.
- Place the Bing Zhi on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
