- Eggs - 4 large
- Sweet potato - 100 grams, grated
- Carrot - 50 grams, grated
- Green onion - 2 stalks, finely chopped
- Cilantro - 2 tablespoons, chopped
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons
Steps
- In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
- Add the grated sweet potato, grated carrot, chopped green onion, and cilantro to the egg mixture and stir until evenly mixed.
- Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
- Pour half of the egg and vegetable mixture into the skillet and spread it evenly to form a pancake.
- Cook for about 3-4 minutes until the edges start to set and the bottom is golden brown.
- Carefully flip the pancake using a spatula and cook for another 3-4 minutes until fully cooked and golden brown.
- Transfer the pancake to a plate and keep warm. Repeat the process with the remaining egg mixture, adding the remaining tablespoon of coconut oil to the skillet if necessary.
- Cut the pancakes into wedges and serve warm.
