Ingredients

  • Eggs - 4 large
  • Sweet potato - 100 grams, grated
  • Carrot - 50 grams, grated
  • Green onion - 2 stalks, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons

Steps

  1. In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. Add the grated sweet potato, grated carrot, chopped green onion, and cilantro to the egg mixture and stir until evenly mixed.
  3. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  4. Pour half of the egg and vegetable mixture into the skillet and spread it evenly to form a pancake.
  5. Cook for about 3-4 minutes until the edges start to set and the bottom is golden brown.
  6. Carefully flip the pancake using a spatula and cook for another 3-4 minutes until fully cooked and golden brown.
  7. Transfer the pancake to a plate and keep warm. Repeat the process with the remaining egg mixture, adding the remaining tablespoon of coconut oil to the skillet if necessary.
  8. Cut the pancakes into wedges and serve warm.
