Ingredients

  • Whole wheat flour - 150 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Salt - 2 grams
  • Olive oil - 15 ml
  • Cooked chicken breast, shredded - 150 grams
  • Bell pepper, thinly sliced - 1 medium
  • Green onions, chopped - 2 stalks
  • Soy sauce - 15 ml
  • Sesame oil - 5 ml
  • Mozzarella cheese, shredded - 100 grams
  • Chinese five-spice powder - 2 grams
  • Black pepper - 1 gram

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a mixing bowl, combine whole wheat flour and salt. Add the yeast mixture and olive oil, then knead until the dough is smooth and elastic, about 10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. While the dough is rising, heat a non-stick skillet over medium heat. Add the sliced bell pepper and green onions, stir-frying for 3-4 minutes until slightly softened.
  5. Add the shredded chicken, soy sauce, sesame oil, Chinese five-spice powder, and black pepper to the skillet. Stir-fry for another 3-4 minutes until everything is heated through. Remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and roll it out on a floured surface into a round shape about 1 cm thick.
  8. Transfer the rolled dough to a pizza stone or baking sheet. Spread the chicken and vegetable mixture evenly over the dough, leaving a small border around the edges.
  9. Sprinkle shredded mozzarella cheese on top of the filling.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.
  11. Remove from the oven, slice, and serve hot.
