Ingredients
- Cooked Jasmine rice - 2 cups (about 300g)
- Beef (sirloin or flank) - 200g, thinly sliced
- Eggs - 2 large
- Green onions - 2, chopped
- Carrot - 1 medium, diced
- Frozen peas - 1/2 cup (75g)
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced beef to the skillet, seasoning with salt and black pepper. Stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and diced carrot, stir-frying for about 2 minutes until softened.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and sesame oil, stirring well to combine all ingredients.
- Add the cooked beef and frozen peas to the rice mixture, stirring until everything is heated through and well combined, about 3-4 minutes.
- Remove from heat and stir in the chopped green onions. Adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with extra green onions if desired.
