Ingredients

  • Cooked Jasmine rice - 2 cups (about 300g)
  • Beef (sirloin or flank) - 200g, thinly sliced
  • Eggs - 2 large
  • Green onions - 2, chopped
  • Carrot - 1 medium, diced
  • Frozen peas - 1/2 cup (75g)
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced beef to the skillet, seasoning with salt and black pepper. Stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and diced carrot, stir-frying for about 2 minutes until softened.
  4. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.
  5. Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and sesame oil, stirring well to combine all ingredients.
  6. Add the cooked beef and frozen peas to the rice mixture, stirring until everything is heated through and well combined, about 3-4 minutes.
  7. Remove from heat and stir in the chopped green onions. Adjust seasoning with additional salt and pepper if needed.
  8. Serve hot, garnished with extra green onions if desired.
