Ingredients

  • Beef flank steak - 200 grams, thinly sliced
  • Wide rice noodles - 200 grams (fresh or dried)
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Bean sprouts - 100 grams
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Water - 100 milliliters

Steps

  1. If using dried rice noodles, soak them in warm water for about 20 minutes until softened, then drain.
  2. In a bowl, marinate the sliced beef with soy sauce, oyster sauce, and cornstarch for 10 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat.
  4. Add the marinated beef to the pan and stir-fry for about 3-4 minutes until browned and just cooked through. Remove the beef and set aside.
  5. In the same pan, add the remaining tablespoon of oil. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
  6. Add sliced bell pepper and julienned carrot, stir-frying for about 2-3 minutes until they begin to soften.
  7. Add the bean sprouts and soaked rice noodles to the pan, along with 100 milliliters of water. Stir well to combine and cook for another 2-3 minutes until the noodles are heated through.
  8. Return the cooked beef to the pan, add chopped green onions, and toss everything together for another 2 minutes to combine the flavors.
  9. Serve hot, garnished with additional green onions if desired.
