Ingredients
- Beef marrow bones - 500 grams
- Water - 1.5 liters
- Garlic cloves - 3, minced
- Ginger - 20 grams, sliced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Star anise - 1 whole
- Black peppercorns - 5
- Salt - to taste
- Cilantro - 10 grams, for garnish
Steps
- In a large pot, place the beef marrow bones and cover them with 1.5 liters of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and skim off any foam that rises to the surface. This helps to keep the broth clear.
- Add minced garlic, sliced ginger, chopped spring onions, soy sauce, star anise, and black peppercorns to the pot.
- Cover the pot and let it simmer gently for about 2 hours, allowing the flavors to meld and the bones to release their nutrients.
- After 2 hours, check the broth for seasoning and add salt to taste.
- Strain the soup into bowls, discarding the solids, and garnish with fresh cilantro before serving.
