  • Star anise - 1 whole
  • Black peppercorns - 5
  • Salt - to taste
  • Cilantro - 10 grams, for garnish

Steps

  1. In a large pot, place the beef marrow bones and cover them with 1.5 liters of water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and skim off any foam that rises to the surface. This helps to keep the broth clear.
  3. Add minced garlic, sliced ginger, chopped spring onions, soy sauce, star anise, and black peppercorns to the pot.
  4. Cover the pot and let it simmer gently for about 2 hours, allowing the flavors to meld and the bones to release their nutrients.
