Ingredients

  • Beef sirloin - 200 grams, thinly sliced
  • Eggplant - 1 medium, cut into bite-sized pieces
  • Bell pepper - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 50 ml
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, sliced for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat.
  2. Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.
  3. In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the eggplant pieces to the pan and stir-fry for about 5-7 minutes, until they start to soften.
  5. Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes.
  6. In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water together until smooth.
  7. Return the beef to the pan, pour the sauce over the mixture, and stir well to combine. Cook for another 2-3 minutes until the sauce thickens slightly.
  8. Drizzle sesame oil over the stir-fry and season with salt and black pepper to taste.
  9. Garnish with sliced green onions before serving. Serve hot with steamed rice.
