- Beef sirloin - 200 grams, thinly sliced
- Eggplant - 1 medium, cut into bite-sized pieces
- Bell pepper - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 50 ml
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, sliced for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat.
- Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the eggplant pieces to the pan and stir-fry for about 5-7 minutes, until they start to soften.
- Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes.
- In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water together until smooth.
- Return the beef to the pan, pour the sauce over the mixture, and stir well to combine. Cook for another 2-3 minutes until the sauce thickens slightly.
- Drizzle sesame oil over the stir-fry and season with salt and black pepper to taste.
- Garnish with sliced green onions before serving. Serve hot with steamed rice.
