Ingredients
- Beef sirloin - 200 grams, thinly sliced
- Egg noodles - 150 grams
- Egg - 2 large
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Soy sauce - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Carrot - 1 medium, julienned
- Bell pepper - 1 small, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced beef and stir-fry until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic, ginger, and the chopped green onions, and stir-fry for about 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the skillet, and stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until just set, then mix with the vegetables.
- Return the cooked beef to the skillet and add the drained egg noodles. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
- Season with salt and black pepper to taste. Serve hot, garnished with extra chopped green onions if desired.
