- Mushrooms (shiitake or button) - 200 grams, halved
- Carrot - 1 medium, thinly sliced
- Green onion - 2 stalks, chopped
- Soy sauce - 3 tablespoons
- Hoisin sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Black pepper - 1/2 teaspoon
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a large bowl, combine soy sauce, hoisin sauce, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
- Add the sliced bell pepper, zucchini, eggplant, mushrooms, and carrots to the marinade, tossing to coat them evenly. Let them marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Once the grill is hot, place the marinated vegetables on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
