Ingredients

  • Zucchini - 2 medium
  • Shrimp (peeled and deveined) - 200 grams
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions (chopped) - 2 stalks
  • Red chili flakes - 1/2 teaspoon
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the zucchini in half lengthwise and scoop out some of the flesh to create a boat shape.
  3. In a bowl, combine the shrimp, minced garlic, grated ginger, soy sauce, sesame oil, red chili flakes, black pepper, and salt. Mix well.
  4. Stuff the zucchini boats with the shrimp mixture evenly.
  5. Drizzle the olive oil over the stuffed zucchini.
