Ingredients

  • Sweet potatoes - 300 grams
  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, chopped
  • Red bell pepper - 1, diced
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. Place the sweet potato cubes in a large bowl, drizzle with vegetable oil, and season with salt and black pepper. Toss to coat evenly.
  4. Spread the sweet potatoes on a baking tray lined with parchment paper and bake for 25 minutes, or until tender.
  5. While the sweet potatoes are baking, drain and press the tofu to remove excess moisture, then cut it into cubes.
  6. In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, and cornstarch. Add the tofu cubes and toss to coat them evenly.
  7. After 25 minutes, remove the sweet potatoes from the oven and push them to one side of the tray. Add the marinated tofu cubes and diced red bell pepper to the other side.
  8. Return the tray to the oven and bake for an additional 15-20 minutes, until the tofu is golden and the sweet potatoes are fully cooked.
  9. Once done, remove from the oven and sprinkle with chopped spring onions and sesame seeds before serving.
