Ingredients

  • 2 medium sweet potatoes - 400 grams
  • 200 grams boneless chicken breast - diced
  • 2 tablespoons soy sauce - 30 ml
  • 1 tablespoon sesame oil - 15 ml
  • 1 teaspoon garlic powder - 5 grams
  • 1 teaspoon ginger powder - 5 grams
  • 1 tablespoon honey - 15 grams
  • 1/2 teaspoon black pepper - 2 grams
  • 1/2 teaspoon salt - 3 grams
  • 2 green onions - chopped
  • 1 tablespoon sesame seeds - 10 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the sweet potatoes, then pierce them several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake in the preheated oven for 30-35 minutes or until tender.
  4. While the sweet potatoes are baking, in a bowl, combine the diced chicken, soy sauce, sesame oil, garlic powder, ginger powder, honey, black pepper, and salt. Mix well to coat the chicken.
  5. In a skillet over medium heat, add the marinated chicken and cook for about 5-7 minutes or until the chicken is fully cooked and no longer pink.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  7. Slice the sweet potatoes lengthwise and fluff the insides with a fork.
  8. Spoon the cooked chicken over the sweet potatoes, then sprinkle with chopped green onions and sesame seeds.
