- 2 medium sweet potatoes - 400 grams
- 200 grams boneless chicken breast - diced
- 2 tablespoons soy sauce - 30 ml
- 1 tablespoon sesame oil - 15 ml
- 1 teaspoon garlic powder - 5 grams
- 1 teaspoon ginger powder - 5 grams
- 1 tablespoon honey - 15 grams
- 1/2 teaspoon black pepper - 2 grams
- 1/2 teaspoon salt - 3 grams
- 2 green onions - chopped
- 1 tablespoon sesame seeds - 10 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the sweet potatoes, then pierce them several times with a fork.
- Place the sweet potatoes on a baking sheet and bake in the preheated oven for 30-35 minutes or until tender.
- While the sweet potatoes are baking, in a bowl, combine the diced chicken, soy sauce, sesame oil, garlic powder, ginger powder, honey, black pepper, and salt. Mix well to coat the chicken.
- In a skillet over medium heat, add the marinated chicken and cook for about 5-7 minutes or until the chicken is fully cooked and no longer pink.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Slice the sweet potatoes lengthwise and fluff the insides with a fork.
- Spoon the cooked chicken over the sweet potatoes, then sprinkle with chopped green onions and sesame seeds.
