Ingredients

  • Sweet corn kernels - 200 grams
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Black pepper - to taste
  • Salt - to taste
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a blender, combine the sweet corn kernels, vegetable broth, minced garlic, grated ginger, and soy sauce. Blend until smooth.
  3. Pour the blended mixture into a saucepan and heat over medium heat. Stir occasionally until it starts to simmer.
  4. In a small bowl, mix cornstarch with 2 tablespoons of water until smooth. Add to the simmering soup to thicken it, stirring continuously.
  5. Season with black pepper and salt to taste, then remove from heat.
  6. Transfer the soup into an oven-safe dish and drizzle with sesame oil. Sprinkle chopped green onion on top.
  7. Bake in the preheated oven for about 15 minutes until heated through.
  8. Remove from the oven and garnish with fresh cilantro before serving.
