- Green onion - 2 stalks, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Black pepper - to taste
- Salt - to taste
- Cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a blender, combine the sweet corn kernels, vegetable broth, minced garlic, grated ginger, and soy sauce. Blend until smooth.
- Pour the blended mixture into a saucepan and heat over medium heat. Stir occasionally until it starts to simmer.
- In a small bowl, mix cornstarch with 2 tablespoons of water until smooth. Add to the simmering soup to thicken it, stirring continuously.
- Season with black pepper and salt to taste, then remove from heat.
- Transfer the soup into an oven-safe dish and drizzle with sesame oil. Sprinkle chopped green onion on top.
- Bake in the preheated oven for about 15 minutes until heated through.
- Remove from the oven and garnish with fresh cilantro before serving.
