Ingredients

  • sweet corn kernels - 200 grams
  • all-purpose flour - 50 grams
  • cornstarch - 20 grams
  • scallions - 2, finely chopped
  • ginger - 1 teaspoon, grated
  • garlic - 1 clove, minced
  • soy sauce - 1 tablespoon
  • sesame oil - 1 teaspoon
  • baking powder - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • water - 50 milliliters
  • olive oil - 1 tablespoon, for brushing

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sweet corn kernels, all-purpose flour, cornstarch, chopped scallions, grated ginger, minced garlic, soy sauce, sesame oil, baking powder, salt, and black pepper.
  3. Gradually add water to the mixture until a thick batter forms; it should be slightly sticky but hold together.
  4. Using a spoon, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 5 cm apart.
  5. Brush the tops of the fritters lightly with olive oil to encourage browning.
