- cornstarch - 20 grams
- scallions - 2, finely chopped
- ginger - 1 teaspoon, grated
- garlic - 1 clove, minced
- soy sauce - 1 tablespoon
- sesame oil - 1 teaspoon
- baking powder - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- water - 50 milliliters
- olive oil - 1 tablespoon, for brushing
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine sweet corn kernels, all-purpose flour, cornstarch, chopped scallions, grated ginger, minced garlic, soy sauce, sesame oil, baking powder, salt, and black pepper.
- Gradually add water to the mixture until a thick batter forms; it should be slightly sticky but hold together.
- Using a spoon, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 5 cm apart.
- Brush the tops of the fritters lightly with olive oil to encourage browning.
