Ingredients
- 2 large bell peppers - any color
- 200 grams ground chicken
- 50 grams quinoa, rinsed
- 100 ml low-sodium chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 2 green onions, chopped
- 1 teaspoon five-spice powder
- Salt and pepper to taste
- 30 grams shredded low-fat cheese (optional)
- Fresh cilantro for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- In a skillet, heat sesame oil over medium heat. Add garlic and ginger, sautéing for 1-2 minutes until fragrant.
- Add ground chicken to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Season with soy sauce, five-spice powder, salt, and pepper.
- Stir in the cooked quinoa and chopped green onions, mixing well to combine.
- Stuff each bell pepper with the chicken and quinoa mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish. If using cheese, sprinkle it on top of each pepper.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to brown the tops.
- Remove from the oven, garnish with fresh cilantro, and serve warm.
