- Fresh spinach - 200 grams
- Firm tofu - 200 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Red chili flakes - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2, chopped for garnish
- Sesame seeds - 1 tablespoon for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Press the tofu to remove excess moisture, then cut it into 1 cm cubes.
- In a large mixing bowl, combine the cubed tofu, spinach, minced garlic, grated ginger, soy sauce, sesame oil, red chili flakes, cornstarch, salt, and black pepper. Toss gently to coat all ingredients evenly.
- Transfer the mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 20 minutes, or until the tofu is golden and the spinach is wilted.
- Remove from the oven and let it cool slightly before serving.
- Garnish with chopped spring onions and sesame seeds before serving.
