Ingredients

  • Cooked jasmine rice - 2 cups
  • Shrimp, peeled and deveined - 200 grams
  • Eggs - 2 large
  • Carrot, diced - 1/2 cup
  • Green peas - 1/2 cup
  • Green onion, chopped - 2 tablespoons
  • Soy sauce (kosher) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro, chopped (for garnish) - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat vegetable oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  3. Add diced carrots and green peas to the skillet, cooking for another 3-4 minutes until slightly tender.
  4. Stir in the shrimp and cook until they turn pink, about 3-4 minutes. Remove from heat.
  5. In a large bowl, combine the cooked jasmine rice, sautéed shrimp and vegetables, green onion, soy sauce, sesame oil, salt, and black pepper. Mix well.
  6. In a separate bowl, beat the eggs and then stir them into the rice mixture until evenly incorporated.
  7. Transfer the mixture into a greased baking dish, spreading it evenly.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly crispy.
  9. Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro before serving.
