- Cooked jasmine rice - 2 cups
- Shrimp, peeled and deveined - 200 grams
- Eggs - 2 large
- Carrot, diced - 1/2 cup
- Green peas - 1/2 cup
- Green onion, chopped - 2 tablespoons
- Soy sauce (kosher) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro, chopped (for garnish) - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat vegetable oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add diced carrots and green peas to the skillet, cooking for another 3-4 minutes until slightly tender.
- Stir in the shrimp and cook until they turn pink, about 3-4 minutes. Remove from heat.
- In a large bowl, combine the cooked jasmine rice, sautéed shrimp and vegetables, green onion, soy sauce, sesame oil, salt, and black pepper. Mix well.
- In a separate bowl, beat the eggs and then stir them into the rice mixture until evenly incorporated.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly crispy.
- Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro before serving.
