- Sesame oil - 1 tablespoon
- Vegetable broth - 250 ml
- Red chili flakes - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Soak the vermicelli noodles in hot water for about 10 minutes until they are softened, then drain and set aside.
- In a mixing bowl, combine the minced garlic, ginger, soy sauce, sesame oil, red chili flakes, black pepper, and salt.
- In a baking dish, lay the softened vermicelli noodles at the bottom and pour the vegetable broth over them.
- Arrange the scallops on top of the vermicelli noodles.
- Drizzle the prepared sauce over the scallops evenly.
- Sprinkle chopped spring onions on top.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
