Ingredients

  • Scallops - 200 grams
  • Vermicelli noodles - 100 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 250 ml
  • Red chili flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the vermicelli noodles in hot water for about 10 minutes until they are softened, then drain and set aside.
  3. In a mixing bowl, combine the minced garlic, ginger, soy sauce, sesame oil, red chili flakes, black pepper, and salt.
  4. In a baking dish, lay the softened vermicelli noodles at the bottom and pour the vegetable broth over them.
  5. Arrange the scallops on top of the vermicelli noodles.
  6. Drizzle the prepared sauce over the scallops evenly.
  7. Sprinkle chopped spring onions on top.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 5 minutes until the scallops are cooked through and slightly golden.
  10. Garnish with coriander leaves before serving.
