Ingredients

  • Chicken breast - 250 grams
  • Jasmine rice - 150 grams
  • Chicken broth - 300 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 100 grams
  • Spring onions - 2 stalks, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the cooking oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  3. Add the diced chicken breast to the skillet and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced carrot, bell pepper, and green peas, cooking for an additional 3-4 minutes.
  5. In a large mixing bowl, combine the jasmine rice, chicken broth, soy sauce, sesame oil, black pepper, and salt.
  6. Add the sautéed chicken and vegetable mixture to the rice mixture, and stir well to combine.
  7. Transfer the mixture to a baking dish and cover it with aluminum foil.
  8. Bake in the preheated oven for 25 minutes.
  9. After 25 minutes, remove the foil, sprinkle chopped spring onions on top, and bake for an additional 10 minutes until the rice is tender and the liquid is absorbed.
  10. Remove from the oven, let it sit for 5 minutes, and serve hot.
