- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams
- Spring onions - 2 stalks, chopped
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the cooking oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
- Add the diced chicken breast to the skillet and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced carrot, bell pepper, and green peas, cooking for an additional 3-4 minutes.
- In a large mixing bowl, combine the jasmine rice, chicken broth, soy sauce, sesame oil, black pepper, and salt.
- Add the sautéed chicken and vegetable mixture to the rice mixture, and stir well to combine.
- Transfer the mixture to a baking dish and cover it with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil, sprinkle chopped spring onions on top, and bake for an additional 10 minutes until the rice is tender and the liquid is absorbed.
- Remove from the oven, let it sit for 5 minutes, and serve hot.
