  • Soy sauce - 2 tablespoons
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium-sized pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger for about 1 minute until fragrant.
  3. Add the diced pumpkin to the pot and cook for an additional 5 minutes, stirring occasionally.
  4. Stir in the jasmine rice, vegetable broth, soy sauce, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
  6. Transfer the rice and pumpkin mixture into an oven-safe dish, spreading it evenly.
  7. Sprinkle the chopped green onions on top and cover the dish with aluminum foil.
  8. Bake in the preheated oven for 15 minutes.
  9. Remove the foil and bake for an additional 5 minutes to slightly crisp the top.
