Steps
- Preheat the oven to 180°C (350°F).
- In a medium-sized pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger for about 1 minute until fragrant.
- Add the diced pumpkin to the pot and cook for an additional 5 minutes, stirring occasionally.

- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Transfer the rice and pumpkin mixture into an oven-safe dish, spreading it evenly.
- Sprinkle the chopped green onions on top and cover the dish with aluminum foil.
- Bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 5 minutes to slightly crisp the top.
