Ingredients

  • Rice flour - 150 grams
  • Water - 200 milliliters
  • Sugar - 30 grams
  • Mushrooms (shiitake or button) - 100 grams, chopped
  • Chinese chives - 50 grams, chopped
  • Carrot - 50 grams, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the rice flour, sugar, and water to form a smooth batter.
  3. In a skillet, heat sesame oil over medium heat. Add chopped mushrooms and sauté for about 5 minutes until tender.
  4. Stir in the grated carrot and chopped Chinese chives, cooking for an additional 3 minutes.
  5. Season the mixture with soy sauce, salt, and pepper, then remove from heat.
  6. Pour half of the rice flour batter into a greased baking dish, spreading it evenly.
  7. Layer the sautéed vegetable mixture over the batter, then pour the remaining batter on top, smoothing it out.
  8. Bake in the preheated oven for 30-35 minutes or until the top is golden and a toothpick inserted comes out clean.
  9. Let it cool for a few minutes before slicing and serving.
