Ingredients

  • Jasmine rice - 150 grams
  • Dried lotus leaves - 2 pieces
  • Chicken breast - 100 grams, diced
  • Mushrooms - 50 grams, sliced
  • Carrot - 1 small, diced
  • Bell pepper - 1 small, diced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Ginger - 1 teaspoon, minced
  • Garlic - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Water - 300 milliliters

Steps

  1. Soak the dried lotus leaves in warm water for about 30 minutes until they are pliable.
  2. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  3. In a pan, heat the sesame oil over medium heat. Add the minced ginger and garlic, sautéing until fragrant.
  4. Add the diced chicken breast to the pan and cook until lightly browned. Then add the sliced mushrooms, diced carrot, and bell pepper, cooking for an additional 5 minutes.
  5. Stir in the soy sauce, green onions, salt, and black pepper, mixing well. Remove from heat.
  6. Drain the soaked rice and mix it with the chicken and vegetable mixture.
  7. Take one lotus leaf and place a portion of the rice mixture in the center. Fold the leaf over to wrap it securely, then tie it with kitchen twine or string.
  8. Repeat the wrapping process with the second lotus leaf and remaining rice mixture.
  9. Place the wrapped lotus leaves in a steaming basket over boiling water or in a preheated oven at 180°C (350°F) for 30-35 minutes.
  10. Once cooked, unwrap the lotus leaves, fluff the rice with a fork, and serve warm.
