- Coarse sea salt - 1 kilogram
- Egg whites - 2 large
- Fresh ginger - 10 grams, sliced
- Spring onions - 2 stalks, cut into lengths
- Fresh coriander - a handful, for garnish
- Lemon - 1, sliced, for serving
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the coarse sea salt with the egg whites and mix until it resembles wet sand.
- Place the cleaned fish on a baking tray lined with parchment paper.
- Stuff the cavity of the fish with ginger slices and spring onion lengths.
- Spread a thin layer of the salt mixture on the baking tray, then place the fish on top.
- Cover the fish completely with the remaining salt mixture, pressing it down to form a solid crust.
- Bake in the preheated oven for about 25-30 minutes, until the fish is cooked through.
- Remove from the oven and let it sit for 5 minutes before cracking the salt crust open.
- Carefully lift the fish out and garnish with fresh coriander and lemon slices before serving.
