Ingredients

  • Whole fish (such as sea bass or snapper) - 500 grams, cleaned and scaled
  • Coarse sea salt - 1 kilogram
  • Egg whites - 2 large
  • Fresh ginger - 10 grams, sliced
  • Spring onions - 2 stalks, cut into lengths
  • Fresh coriander - a handful, for garnish
  • Lemon - 1, sliced, for serving

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the coarse sea salt with the egg whites and mix until it resembles wet sand.
  3. Place the cleaned fish on a baking tray lined with parchment paper.
  4. Stuff the cavity of the fish with ginger slices and spring onion lengths.
  5. Spread a thin layer of the salt mixture on the baking tray, then place the fish on top.
  6. Cover the fish completely with the remaining salt mixture, pressing it down to form a solid crust.
  7. Bake in the preheated oven for about 25-30 minutes, until the fish is cooked through.
  8. Remove from the oven and let it sit for 5 minutes before cracking the salt crust open.
  9. Carefully lift the fish out and garnish with fresh coriander and lemon slices before serving.
