- all-purpose flour - 200 grams
- boiling water - 120 milliliters
- salt - 1/2 teaspoon
- chopped fresh chives - 50 grams
- vegetable oil - 2 tablespoons
- sesame oil - 1 teaspoon
- additional flour for dusting - as needed
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water while stirring with a fork until a shaggy dough forms.
- Let the dough cool slightly, then knead it on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.
- After resting, divide the dough into two equal portions. Roll out each portion into a thin circle, about 25 cm in diameter.
- Brush each circle lightly with vegetable oil and sprinkle evenly with chopped chives.
- Roll each circle into a log, then coil the log into a spiral shape. Flatten the spiral gently with your hand and then roll it out to a circle again, about 1 cm thick.
- Preheat the oven to 200°C (400°F). Place the pancakes on a baking sheet lined with parchment paper.
- Brush the top of each pancake with sesame oil. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy on the outside.
- Remove from the oven and allow to cool slightly before cutting into wedges. Serve warm.
