Ingredients

  • Jasmine rice - 1 cup
  • Chinese sausage (lap Cheong) - 100 grams, sliced
  • Chicken broth - 1.5 cups
  • Green peas - 1/2 cup, frozen
  • Carrot - 1 medium, diced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  3. In a medium bowl, combine the rinsed rice, sliced Chinese sausage, diced carrot, frozen green peas, garlic, soy sauce, sesame oil, salt, and black pepper.
  4. Pour the chicken broth over the rice mixture and stir to combine.
  5. Transfer the mixture to a greased baking dish and spread it evenly.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil, stir the rice, and make a small well in the center.
  8. Pour the beaten egg into the well and gently mix it into the rice.
  9. Return to the oven uncovered and bake for an additional 10 minutes, or until the rice is tender and the egg is cooked through.
  10. Remove from the oven and garnish with chopped green onions before serving.
