Ingredients

  • Chicken breast - 300 grams
  • Jasmine rice - 150 grams
  • Chicken broth - 300 milliliters
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Bell pepper - 1, diced
  • Carrot - 1, diced
  • Frozen peas - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 1 tablespoon (optional, for thickening sauce)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the soy sauce, sesame oil, minced garlic, and grated ginger. Add the chicken breast and marinate for at least 15 minutes.
  3. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  4. In a baking dish, combine the rinsed rice, chicken broth, diced bell pepper, diced carrot, and frozen peas. Stir in the salt and black pepper.
  5. Place the marinated chicken breasts on top of the rice mixture. If using cornstarch, dissolve it in a small amount of water and drizzle it over the chicken for thickening.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
  8. Remove from the oven and let it sit for 5 minutes. Garnish with chopped green onions before serving.
