- Chicken breast - 300 grams
- Jasmine rice - 150 grams
- Chicken broth - 300 milliliters
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Bell pepper - 1, diced
- Carrot - 1, diced
- Frozen peas - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Cornstarch - 1 tablespoon (optional, for thickening sauce)
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the soy sauce, sesame oil, minced garlic, and grated ginger. Add the chicken breast and marinate for at least 15 minutes.
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a baking dish, combine the rinsed rice, chicken broth, diced bell pepper, diced carrot, and frozen peas. Stir in the salt and black pepper.
- Place the marinated chicken breasts on top of the rice mixture. If using cornstarch, dissolve it in a small amount of water and drizzle it over the chicken for thickening.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
- Remove from the oven and let it sit for 5 minutes. Garnish with chopped green onions before serving.
