  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon (grated)
  • Garlic - 2 cloves (minced)
  • Red bell pepper - 1/2 cup (diced)
  • Shredded cheese - 1/2 cup (optional)
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1 (cut into wedges for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the cooked black beans, chopped green onion, cilantro, soy sauce, sesame oil, grated ginger, minced garlic, diced red bell pepper, chili powder, cumin, salt, and pepper. Mix well.
  3. Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  4. Spoon the black bean mixture evenly onto each tortilla, then roll them up tightly and place them seam-side down in a baking dish.
  5. If using, sprinkle shredded cheese on top of the rolled tacos.
  6. Bake in the preheated oven for 15-20 minutes, or until the tortillas are crispy and the cheese is melted.
  7. Remove from the oven and let cool for a few minutes. Serve with lime wedges.
