  • Spring onions - 2, chopped
  • Carrot - 1 small, julienned
  • Spinach - 100 grams, fresh
  • Eggs - 2, medium
  • Salt - to taste
  • Black pepper - to taste
  • Chili oil - for drizzling (optional)

Steps

  1. Boil a pot of water and cook the wheat noodles according to package instructions until al dente, then drain and set aside.
  2. In a separate pot, heat the chicken broth over medium heat and add the minced garlic and grated ginger; simmer for 5 minutes.
  3. Stir in the soy sauce, sesame oil, and season with salt and black pepper to taste.
  4. Add the julienned carrot and spinach to the broth, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. In a small pan, poach the eggs in simmering water for about 3-4 minutes or until the whites are set but the yolks remain runny.
  6. To serve, place the cooked noodles in a bowl, pour the hot broth and vegetables over the noodles, and top with a poached egg.
  7. Garnish with chopped spring onions and drizzle with chili oil if desired.
