Steps
- Boil a pot of water and cook the wheat noodles according to package instructions until al dente, then drain and set aside.
- In a separate pot, heat the chicken broth over medium heat and add the minced garlic and grated ginger; simmer for 5 minutes.
- Stir in the soy sauce, sesame oil, and season with salt and black pepper to taste.
- Add the julienned carrot and spinach to the broth, cooking for an additional 3-4 minutes until the vegetables are tender.
- In a small pan, poach the eggs in simmering water for about 3-4 minutes or until the whites are set but the yolks remain runny.
- To serve, place the cooked noodles in a bowl, pour the hot broth and vegetables over the noodles, and top with a poached egg.
- Garnish with chopped spring onions and drizzle with chili oil if desired.
