Ingredients

  • Rice noodles - 150g
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snap peas - 100g
  • Spring onions - 2, chopped
  • Soy sauce (gluten-free) - 3 tbsp
  • Sesame oil - 1 tbsp
  • Cornstarch - 1 tsp (optional, for thickening)
  • Water - 250ml
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tsp, for garnish

Steps

  1. Soak the rice noodles in hot water for about 10 minutes or until soft, then drain and set aside.
  2. In a large pan or wok, heat the sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced bell pepper, julienned carrot, and snap peas to the pan. Stir-fry the vegetables for about 3-4 minutes until they are tender but still crisp.
  4. In a small bowl, mix the soy sauce with water and cornstarch if using. Pour this mixture over the vegetables in the pan.
  5. Add the soaked rice noodles to the pan and toss everything together, ensuring the noodles are well coated with the sauce. Stir-fry for another 2-3 minutes, adding salt and black pepper to taste.
  6. Remove from heat, sprinkle with chopped spring onions and sesame seeds, and serve immediately.
