- Rice noodles - 150g
- Garlic - 2 cloves, minced

- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Snap peas - 100g
- Spring onions - 2, chopped
- Soy sauce (gluten-free) - 3 tbsp
- Sesame oil - 1 tbsp
- Cornstarch - 1 tsp (optional, for thickening)
- Water - 250ml
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tsp, for garnish
Steps
- Soak the rice noodles in hot water for about 10 minutes or until soft, then drain and set aside.
- In a large pan or wok, heat the sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the sliced bell pepper, julienned carrot, and snap peas to the pan. Stir-fry the vegetables for about 3-4 minutes until they are tender but still crisp.
- In a small bowl, mix the soy sauce with water and cornstarch if using. Pour this mixture over the vegetables in the pan.
- Add the soaked rice noodles to the pan and toss everything together, ensuring the noodles are well coated with the sauce. Stir-fry for another 2-3 minutes, adding salt and black pepper to taste.
- Remove from heat, sprinkle with chopped spring onions and sesame seeds, and serve immediately.
