Ingredients

  • Garlic - 4 cloves, minced
  • Spring onions - 2, chopped
  • Soy sauce - 30 ml, gluten-free
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Chicken broth - 250 ml, gluten-free
  • Dried red chili - 2, whole
  • Star anise - 1
  • Coriander leaves - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat sesame oil over medium heat. Add ginger and garlic, sautéing until fragrant.
  2. Add the chicken thighs to the pot, browning them on both sides for about 5 minutes.
  3. Pour in the gluten-free soy sauce and rice vinegar, stirring to coat the chicken.
  4. Add the chicken broth, dried red chili, star anise, salt, and black pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and let simmer for 15-20 minutes until the chicken is cooked through.
  6. Remove the chicken from the pot and let it rest for a few minutes before slicing.
  7. Serve the chicken slices topped with chopped spring onions and coriander leaves.
