- Soy sauce - 30 ml, gluten-free
- Rice vinegar - 15 ml
- Sesame oil - 10 ml
- Chicken broth - 250 ml, gluten-free
- Dried red chili - 2, whole
- Star anise - 1
- Coriander leaves - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat sesame oil over medium heat. Add ginger and garlic, sautéing until fragrant.
- Add the chicken thighs to the pot, browning them on both sides for about 5 minutes.
- Pour in the gluten-free soy sauce and rice vinegar, stirring to coat the chicken.
- Add the chicken broth, dried red chili, star anise, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover, and let simmer for 15-20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and let it rest for a few minutes before slicing.
- Serve the chicken slices topped with chopped spring onions and coriander leaves.
