- Jasmine rice - 150 grams
- Water - 300 milliliters
- Bai Jiu (Chinese white liquor) - 30 milliliters
- Chicken breast, diced - 100 grams
- Carrot, diced - 50 grams
- Green peas - 50 grams
- Spring onion, chopped - 2 tablespoons
- Garlic, minced - 1 clove
- Ginger, minced - 1 teaspoon
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Vegetable oil - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the vegetable oil over medium heat and add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
- Add the diced chicken breast to the pot and cook until it is no longer pink, about 5 minutes.
- Stir in the diced carrot and green peas, and cook for another 3-4 minutes until the vegetables are tender.
- Drain the soaked rice and add it to the pot along with the Bai Jiu, soy sauce, salt, and pepper. Stir to combine all the ingredients.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from the heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, stir in the chopped spring onion, and serve hot.
