Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Bai Jiu (Chinese white liquor) - 30 milliliters
  • Chicken breast, diced - 100 grams
  • Carrot, diced - 50 grams
  • Green peas - 50 grams
  • Spring onion, chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Ginger, minced - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat and add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
  3. Add the diced chicken breast to the pot and cook until it is no longer pink, about 5 minutes.
  4. Stir in the diced carrot and green peas, and cook for another 3-4 minutes until the vegetables are tender.
  5. Drain the soaked rice and add it to the pot along with the Bai Jiu, soy sauce, salt, and pepper. Stir to combine all the ingredients.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  7. After 15 minutes, remove the pot from the heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, stir in the chopped spring onion, and serve hot.
