Ingredients

  • Duck breast - 400 grams
  • Himalayan salt - 2 teaspoons
  • Five-spice powder - 1 teaspoon
  • Honey - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice wine (Shaoxing wine) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Star anise - 1 piece
  • Black tea leaves - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Wood chips (for smoking) - 1 cup

Steps

  1. Pat the duck breast dry with paper towels and score the skin in a crisscross pattern without cutting into the meat.
  2. In a bowl, mix the Himalayan salt, five-spice powder, honey, soy sauce, rice wine, minced garlic, grated ginger, and star anise to create a marinade.
  3. Rub the marinade all over the duck breast, ensuring it gets into the scored skin. Cover and refrigerate for at least 1 hour, or overnight for best results.
  4. Remove the duck from the refrigerator and let it come to room temperature for about 30 minutes.
  5. Prepare your smoker by soaking wood chips in water for 30 minutes, then draining them. Place the soaked wood chips in the smoker box or directly on the coals if using a charcoal grill.
  6. Preheat the smoker to a medium heat (around 150°C/300°F).
  7. Place the duck breast skin-side up on the grill rack and smoke for about 1 hour, maintaining a consistent temperature. Add more wood chips as needed to maintain smoke.
  8. After smoking, remove the duck from the smoker and let it rest for 10 minutes before slicing.
  9. Serve the smoked duck with a drizzle of brown sugar mixed with a little warm water for a sweet glaze.
