- Jasmine rice - 150 grams
- Mixed mushrooms (shiitake, oyster, and enoki) - 200 grams, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, sliced
- Coconut aminos - 2 tablespoons
- Chicken or vegetable broth - 300 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the chopped mushrooms to the pot and cook for 5-7 minutes, stirring occasionally, until they are tender and have released their moisture.
- Stir in the rinsed jasmine rice, coconut aminos, and sliced green onions, cooking for another 2 minutes to toast the rice slightly.
- Pour in the chicken or vegetable broth, and season with salt and black pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro if desired, and serve warm.
