Ingredients
- Quail - 2 whole (about 250g each)
- Soy sauce (gluten-free) - 60ml
- Shaoxing wine - 30ml
- Honey - 1 tablespoon (15g)
- Five-spice powder - 1 teaspoon (5g)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon (5ml)
- Salt - to taste
- Ground black pepper - to taste
- Chopped scallions - for garnish
Steps
- Clean the quail thoroughly under cold water and pat dry with paper towels.
- In a mixing bowl, combine the soy sauce, Shaoxing wine, honey, five-spice powder, minced garlic, grated ginger, sesame oil, salt, and ground black pepper to create the marinade.
- Place the quail in a large resealable plastic bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for more flavor.
- Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are white hot.
- Remove the quail from the marinade and let any excess drip off. Discard the leftover marinade.
- Place the quail on the grill, skin side down, and grill for about 10-12 minutes, turning occasionally until the skin is crispy and the meat is cooked through (internal temperature should reach 74°C).
- Once cooked, remove the quail from the grill and let them rest for 5 minutes.
- Garnish with chopped scallions before serving.
