Ingredients

  • Quail - 2 whole (about 250g each)
  • Soy sauce (gluten-free) - 60ml
  • Shaoxing wine - 30ml
  • Honey - 1 tablespoon (15g)
  • Five-spice powder - 1 teaspoon (5g)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon (5ml)
  • Salt - to taste
  • Ground black pepper - to taste
  • Chopped scallions - for garnish

Steps

  1. Clean the quail thoroughly under cold water and pat dry with paper towels.
  2. In a mixing bowl, combine the soy sauce, Shaoxing wine, honey, five-spice powder, minced garlic, grated ginger, sesame oil, salt, and ground black pepper to create the marinade.
  3. Place the quail in a large resealable plastic bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for more flavor.
  4. Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are white hot.
  5. Remove the quail from the marinade and let any excess drip off. Discard the leftover marinade.
  6. Place the quail on the grill, skin side down, and grill for about 10-12 minutes, turning occasionally until the skin is crispy and the meat is cooked through (internal temperature should reach 74°C).
  7. Once cooked, remove the quail from the grill and let them rest for 5 minutes.
  8. Garnish with chopped scallions before serving.
