- Chicken broth - 300 ml
- Mushrooms (shiitake or button) - 100 grams, sliced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish

- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the diced carrot and bell pepper to the pan, cooking for 3-4 minutes until they start to soften.
- Stir in the sliced mushrooms and cook for an additional 2-3 minutes until they are tender.
- Drain the soaked rice and add it to the pan, stirring to combine with the vegetables.
- Pour in the chicken broth and coconut aminos, and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
- Season with salt and black pepper to taste, then garnish with chopped green onions and fresh cilantro before serving.
