Ingredients

  • Jasmine rice - 150 grams
  • Chicken broth - 300 ml
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
  3. Add the diced carrot and bell pepper to the pan, cooking for 3-4 minutes until they start to soften.
  4. Stir in the sliced mushrooms and cook for an additional 2-3 minutes until they are tender.
  5. Drain the soaked rice and add it to the pan, stirring to combine with the vegetables.
  6. Pour in the chicken broth and coconut aminos, and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
  9. Season with salt and black pepper to taste, then garnish with chopped green onions and fresh cilantro before serving.
