Ingredients

  • Almond Flour - 100 grams
  • Eggs - 2 large
  • Water - 150 ml
  • Salt - 1/2 teaspoon
  • Green onions - 2, finely chopped
  • Shredded cheese (mozzarella or cheddar) - 50 grams
  • Cooked chicken breast, shredded - 100 grams
  • Soy sauce (low sodium) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cilantro - a handful, chopped (optional)

Steps

  1. In a bowl, mix the almond flour, eggs, water, and salt until smooth to form a batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a thin layer.
  4. Cook for about 2-3 minutes, until the edges start to lift and the bottom is golden brown.
  5. Flip the pancake and immediately sprinkle half of the green onions, cheese, and shredded chicken over one half.
  6. Drizzle half of the soy sauce on top of the filling, then fold the pancake over to cover the filling.
  7. Cook for another 2-3 minutes until the cheese is melted and the pancake is crispy.
  8. Remove from the skillet and repeat the process with the remaining batter and fillings.
  9. Serve hot, garnished with cilantro if desired.
