- Almond Flour - 100 grams
- Eggs - 2 large
- Water - 150 ml
- Salt - 1/2 teaspoon
- Green onions - 2, finely chopped
- Shredded cheese (mozzarella or cheddar) - 50 grams
- Cooked chicken breast, shredded - 100 grams
- Soy sauce (low sodium) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cilantro - a handful, chopped (optional)
Steps
- In a bowl, mix the almond flour, eggs, water, and salt until smooth to form a batter.
- Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
- Pour half of the batter into the skillet, spreading it evenly to form a thin layer.
- Cook for about 2-3 minutes, until the edges start to lift and the bottom is golden brown.
- Flip the pancake and immediately sprinkle half of the green onions, cheese, and shredded chicken over one half.
- Drizzle half of the soy sauce on top of the filling, then fold the pancake over to cover the filling.
- Cook for another 2-3 minutes until the cheese is melted and the pancake is crispy.
- Remove from the skillet and repeat the process with the remaining batter and fillings.
- Serve hot, garnished with cilantro if desired.
