- Black beans - 200 grams (cooked)
- Quinoa - 100 grams (cooked)
- Oats - 50 grams (rolled)
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium (sliced)
- Avocado - 1 (sliced)
- Vegan mayo - 2 tablespoons
- Pickled jalapeños - to taste
Steps
- In a large bowl, mash the cooked black beans with a fork until slightly chunky.
- Add the cooked quinoa, rolled oats, chopped onion, minced garlic, cumin, paprika, salt, and black pepper to the bowl. Mix well until combined.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the whole wheat burger buns in a separate pan with the remaining olive oil until lightly browned.
- Assemble the burgers by spreading vegan mayo on the bottom half of each bun. Place a lettuce leaf, the black bean patty, tomato slices, avocado slices, and pickled jalapeños on top.
- Finish with the top half of the bun, serve immediately, and enjoy your X-Tudo Vegano!
