  • Quinoa - 100 grams (cooked)
  • Oats - 50 grams (rolled)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium (sliced)
  • Avocado - 1 (sliced)
  • Vegan mayo - 2 tablespoons
  • Pickled jalapeños - to taste

Steps

  1. In a large bowl, mash the cooked black beans with a fork until slightly chunky.
  2. Add the cooked quinoa, rolled oats, chopped onion, minced garlic, cumin, paprika, salt, and black pepper to the bowl. Mix well until combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, toast the whole wheat burger buns in a separate pan with the remaining olive oil until lightly browned.
  6. Assemble the burgers by spreading vegan mayo on the bottom half of each bun. Place a lettuce leaf, the black bean patty, tomato slices, avocado slices, and pickled jalapeños on top.
