- Canned black beans - 400 grams, drained and rinsed
- Cooked quinoa - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Panko breadcrumbs - 50 grams
- Kosher burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1, sliced
- Vegan mayonnaise - 2 tablespoons
- Lime - 1, juiced
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- In a large bowl, mash the drained black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, sautéed onion and garlic, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix until well combined.
- Gradually add panko breadcrumbs to the mixture until it holds together but is not too dry. Form the mixture into two patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the burger buns lightly. Spread vegan mayonnaise on each bun and drizzle with fresh lime juice.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the bean patty, sliced tomatoes, and avocado. Top with the other half of the bun.
- Serve immediately with a side salad or fries if desired.
