Ingredients

  • Canned black beans - 400 grams, drained and rinsed
  • Cooked quinoa - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Panko breadcrumbs - 50 grams
  • Kosher burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1, sliced
  • Vegan mayonnaise - 2 tablespoons
  • Lime - 1, juiced

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  2. In a large bowl, mash the drained black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the cooked quinoa, sautéed onion and garlic, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix until well combined.
  4. Gradually add panko breadcrumbs to the mixture until it holds together but is not too dry. Form the mixture into two patties.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, toast the burger buns lightly. Spread vegan mayonnaise on each bun and drizzle with fresh lime juice.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the bean patty, sliced tomatoes, and avocado. Top with the other half of the bun.
  8. Serve immediately with a side salad or fries if desired.
