- Chopped bell pepper - 50 grams
- Chopped fresh parsley - 2 tablespoons
- Gluten-free breadcrumbs - 50 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
- Gluten-free burger buns - 2
Steps
- In a large bowl, mash the cooked black beans with a fork until slightly chunky.
- Add the cooked quinoa, chopped onion, minced garlic, chopped bell pepper, fresh parsley, gluten-free breadcrumbs, egg, salt, black pepper, and paprika to the mashed beans. Mix thoroughly until well combined.
- Form the mixture into two equal-sized patties.
- Heat the olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
