- cooked black beans - 200 grams
- quinoa - 50 grams
- red onion - 1 small, diced
- garlic - 2 cloves, minced
- cumin powder - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- gluten-free breadcrumbs - 50 grams
- fresh parsley - 2 tablespoons, chopped
- avocado - 1 medium, mashed
- lime juice - 1 tablespoon
- gluten-free burger buns - 2
- tomato - 1 medium, sliced
- lettuce leaves - 4
Steps
- In a pot, cook the quinoa according to package instructions, usually about 15 minutes.
- In a mixing bowl, mash the cooked black beans with a fork until mostly smooth.
- Add the cooked quinoa, diced red onion, minced garlic, cumin, paprika, salt, black pepper, gluten-free breadcrumbs, and chopped parsley to the mashed beans. Mix until well combined.
- Form the mixture into two patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side, until they are golden brown.
- While the patties are cooking, prepare the avocado spread by mixing the mashed avocado with lime juice and a pinch of salt.
- Once the patties are ready, assemble the burgers by placing each patty on a gluten-free bun, topped with avocado spread, sliced tomato, and lettuce.
