Ingredients

  • cooked black beans - 200 grams
  • quinoa - 50 grams
  • red onion - 1 small, diced
  • garlic - 2 cloves, minced
  • cumin powder - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • gluten-free breadcrumbs - 50 grams
  • fresh parsley - 2 tablespoons, chopped
  • avocado - 1 medium, mashed
  • lime juice - 1 tablespoon
  • gluten-free burger buns - 2
  • tomato - 1 medium, sliced
  • lettuce leaves - 4

Steps

  1. In a pot, cook the quinoa according to package instructions, usually about 15 minutes.
  2. In a mixing bowl, mash the cooked black beans with a fork until mostly smooth.
  3. Add the cooked quinoa, diced red onion, minced garlic, cumin, paprika, salt, black pepper, gluten-free breadcrumbs, and chopped parsley to the mashed beans. Mix until well combined.
  4. Form the mixture into two patties.
  5. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side, until they are golden brown.
  6. While the patties are cooking, prepare the avocado spread by mixing the mashed avocado with lime juice and a pinch of salt.
  7. Once the patties are ready, assemble the burgers by placing each patty on a gluten-free bun, topped with avocado spread, sliced tomato, and lettuce.
