- Quinoa - 75 grams (cooked)
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Gluten-free burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- In a large bowl, mash the cooked chickpeas with a fork until slightly chunky.
- Add the cooked quinoa, grated carrot, grated zucchini, chopped red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties, about 1.5 centimeters thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side until golden brown and crispy.
- While the patties are cooking, slice the gluten-free buns in half and toast them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and sliced avocado. Top with the other half of the bun.
