  • Quinoa - 75 grams (cooked)
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Gluten-free burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add the cooked quinoa, grated carrot, grated zucchini, chopped red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 centimeters thick.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, slice the gluten-free buns in half and toast them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and sliced avocado. Top with the other half of the bun.
