- Quinoa - 100 grams
- Black beans - 150 grams (cooked)
- Red onion - 50 grams (finely chopped)
- Garlic - 1 clove (minced)
- Cilantro - 30 grams (chopped)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
Steps
- Rinse the quinoa under cold water and then cook it in a pot with 200 ml of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the water is absorbed and the quinoa is fluffy.
- In a large bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, finely chopped red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
- Form the mixture into two equal-sized patties. If the mixture is too wet, add a little bit of quinoa flour or breadcrumbs to help bind it.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
- While the patties are cooking, toast the whole grain burger buns lightly on a separate pan.
- Assemble the burgers by placing each patty on a bun, topping with lettuce, tomato slices, and avocado. Close the burger with the other half of the bun and serve immediately.
