Ingredients

  • Quinoa - 100 grams
  • Black beans - 150 grams (cooked)
  • Red onion - 50 grams (finely chopped)
  • Garlic - 1 clove (minced)
  • Cilantro - 30 grams (chopped)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Avocado - 1/2 (sliced)

Steps

  1. Rinse the quinoa under cold water and then cook it in a pot with 200 ml of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the water is absorbed and the quinoa is fluffy.
  2. In a large bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  3. Add the cooked quinoa, finely chopped red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
  4. Form the mixture into two equal-sized patties. If the mixture is too wet, add a little bit of quinoa flour or breadcrumbs to help bind it.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
  6. While the patties are cooking, toast the whole grain burger buns lightly on a separate pan.
  7. Assemble the burgers by placing each patty on a bun, topping with lettuce, tomato slices, and avocado. Close the burger with the other half of the bun and serve immediately.
