  • Black beans - 200 grams (cooked)
  • Quinoa - 100 grams (cooked)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Flaxseed meal - 1 tablespoon
  • Water - 3 tablespoons
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a bowl, mash the cooked black beans with a fork until mostly smooth.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until the onion is translucent.
  3. Add the sautéed onion and garlic to the mashed black beans along with the cooked quinoa, chopped parsley, paprika, cumin, salt, black pepper, and flaxseed meal mixed with water to form a binding paste.
  4. Mix everything well until combined, then form two patties from the mixture.
  5. In the same skillet, heat the remaining olive oil over medium heat and cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
  6. Toast the whole wheat burger buns lightly on the skillet.
  7. Assemble the burgers by placing the lettuce on the bottom half of the bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
