  • Young green jackfruit - 200 grams, drained and shredded
  • Black beans - 100 grams, cooked and mashed
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams, ground into flour
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1/2, sliced

Steps

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  2. Add the shredded jackfruit to the pan and stir in the cumin, paprika, salt, and black pepper. Cook for about 5 minutes, allowing the flavors to meld.
  3. Mix in the mashed black beans and ground oats, cooking for an additional 5 minutes. Remove from heat and stir in chopped parsley.
  4. Let the mixture cool slightly, then form it into two patties.
  5. In the same pan, add a little more olive oil and cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
  6. To assemble, place the lettuce on the bottom half of each burger bun, add the cooked patty, top with tomato slices and avocado, then cover with the top half of the bun.
