- Young green jackfruit - 200 grams, drained and shredded
- Black beans - 100 grams, cooked and mashed
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams, ground into flour
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
Steps
- Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Add the shredded jackfruit to the pan and stir in the cumin, paprika, salt, and black pepper. Cook for about 5 minutes, allowing the flavors to meld.
- Mix in the mashed black beans and ground oats, cooking for an additional 5 minutes. Remove from heat and stir in chopped parsley.
- Let the mixture cool slightly, then form it into two patties.
- In the same pan, add a little more olive oil and cook the patties over medium heat for about 4-5 minutes on each side until golden brown.
- To assemble, place the lettuce on the bottom half of each burger bun, add the cooked patty, top with tomato slices and avocado, then cover with the top half of the bun.
