- Cooked quinoa - 100 grams
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cilantro - 2 tablespoons (chopped)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat buns - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
- Vegan mayonnaise - 2 tablespoons
Steps
- In a bowl, mash the cooked black beans with a fork until roughly smooth.
- Add the cooked quinoa, chopped onion, minced garlic, cilantro, cumin, paprika, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into 2 burger patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
- Toast the whole wheat buns lightly in the same skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of the bun, followed by the patty, sliced tomato, avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
- Serve immediately with your choice of sides.
