Ingredients

  • Fresh spinach - 200 grams
  • Chickpeas (cooked) - 1 cup (240 grams)
  • Quinoa (cooked) - 1/2 cup (90 grams)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Oats (rolled) - 1/4 cup (30 grams)
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 (dairy-free)
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the cooked chickpeas, cooked quinoa, sautéed spinach mixture, oats, nutritional yeast, cumin, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  4. Form the mixture into two burger patties.
  5. Preheat a non-stick skillet or grill over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  6. To assemble the burger, place each patty on a burger bun. Top with lettuce, tomato slices, and avocado. Serve immediately.
