- Fresh spinach - 200 grams
- Chickpeas (cooked) - 1 cup (240 grams)
- Quinoa (cooked) - 1/2 cup (90 grams)
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Oats (rolled) - 1/4 cup (30 grams)
- Nutritional yeast - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2 (dairy-free)
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked chickpeas, cooked quinoa, sautéed spinach mixture, oats, nutritional yeast, cumin, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into two burger patties.
- Preheat a non-stick skillet or grill over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
- To assemble the burger, place each patty on a burger bun. Top with lettuce, tomato slices, and avocado. Serve immediately.
