- Cooked quinoa - 50 grams
- Garlic (minced) - 2 cloves
- Onion (finely chopped) - 1 small
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats (rolled) - 30 grams
- Burger buns - 2
- Lettuce leaves - 2
- Tomato (sliced) - 1 medium
- Avocado (sliced) - 1/2
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).
- Chop the portobello mushrooms finely and add them to the skillet. Cook until they release their moisture and are browned, about 5-7 minutes.
- In a bowl, combine the cooked chickpeas, sautéed mushrooms, cooked quinoa, soy sauce, ground cumin, paprika, salt, black pepper, and rolled oats. Mash the mixture slightly with a fork until combined but still chunky.
- Form the mixture into two patties, ensuring they hold together well. If too crumbly, add a bit more oats or quinoa.
- Heat the remaining olive oil in the skillet, then cook the patties for about 4-5 minutes on each side until crispy and golden brown.
- While the patties are cooking, place the burger buns in the oven for about 5 minutes to toast.
- Assemble your burger by placing a patty on each bun, topped with lettuce, tomato slices, and avocado.
