- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Egg - 1 large
- Cornmeal - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Gluten-free burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a food processor, combine the shrimp, minced garlic, green onion, cilantro, lime juice, egg, cornmeal, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
- Form the shrimp mixture into two equally sized patties, about 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Once hot, add the shrimp patties and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, lightly toast the gluten-free burger buns in a separate pan or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the shrimp patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your choice of dipping sauce or side.
