  • Cornmeal - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Gluten-free burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a food processor, combine the shrimp, minced garlic, green onion, cilantro, lime juice, egg, cornmeal, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Form the shrimp mixture into two equally sized patties, about 1.5 cm thick.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the shrimp patties and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  4. While the patties are cooking, lightly toast the gluten-free burger buns in a separate pan or in a toaster.
  5. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the shrimp patty, sliced tomato, and avocado. Top with the other half of the bun.
  6. Serve immediately with your choice of dipping sauce or side.
