Ingredients

  • Raw cashews - 100 grams
  • Water - 150 ml (for soaking cashews)
  • Olive oil - 1 tablespoon
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 200 grams, cooked and drained
  • Carrot - 1 small, grated
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. Soak the cashews in water for at least 2 hours or overnight to soften them.
  2. Drain the soaked cashews and blend them with 2 tablespoons of water until smooth to create a cashew cream. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. In a mixing bowl, combine the cooked chickpeas, grated carrot, sautéed onion and garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Mash the mixture with a fork until well combined but still slightly chunky.
  5. Form the chickpea mixture into two patties.
  6. In the same skillet, add a little more olive oil if necessary, and cook the patties over medium heat for about 4-5 minutes on each side, or until golden brown and heated through.
  7. While the patties are cooking, toast the whole wheat burger buns in a toaster or on a skillet until golden.
  8. Assemble the burgers by spreading a generous amount of cashew cream on the bottom bun, adding the lettuce, cooked chickpea patty, sliced tomato, and avocado. Top with the other half of the bun.
  9. Serve immediately and enjoy your X-Burguer de Caju!
