Ingredients
- Raw cashews - 100 grams
- Water - 150 ml (for soaking cashews)
- Olive oil - 1 tablespoon
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Chickpeas - 200 grams, cooked and drained
- Carrot - 1 small, grated
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- Soak the cashews in water for at least 2 hours or overnight to soften them.
- Drain the soaked cashews and blend them with 2 tablespoons of water until smooth to create a cashew cream. Set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- In a mixing bowl, combine the cooked chickpeas, grated carrot, sautéed onion and garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Mash the mixture with a fork until well combined but still slightly chunky.
- Form the chickpea mixture into two patties.
- In the same skillet, add a little more olive oil if necessary, and cook the patties over medium heat for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the whole wheat burger buns in a toaster or on a skillet until golden.
- Assemble the burgers by spreading a generous amount of cashew cream on the bottom bun, adding the lettuce, cooked chickpea patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately and enjoy your X-Burguer de Caju!
