Steps

  1. Preheat the grill or a non-stick skillet over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. In a bowl, mix the garlic powder, onion powder, paprika, cumin, black pepper, chickpea flour, and olive oil to form a batter.
  5. Coat each eggplant slice in the batter, ensuring they are well covered.
  6. Place the coated eggplant slices on the grill or skillet, cooking for about 5-6 minutes on each side until golden brown and tender.
  7. Toast the burger buns lightly on the grill or in a toaster.
